Cartoon like, but not child-like. Perhaps in line with the movie "Zootopia" which just opened in the US (a disney movie). I don't picture him being fat...more average sized I'd say. If he had an age/generation it would be college-aged. Hipster but not a slacker ;) I hope this helps a bit. I want the artists to have some license on how to design him. To see what others come up with. Details vs minimalist. In other words, not a minimalist logo design/illustration, rather a full mascot, cartoon type illustration.
