I don''t know what the standard brochure sizes are, but one that is roughly the dimensions of a piece of paper when it''s closed?  The size of a folder?  I suppose it could be smaller, so feel free to do what works best with your design.  As for pages, I am imagining one for "about us", one for each service section, and maybe a contact section.  I hope that helps and thanks for your interest!
