What shape will the sign be? Will it hang, or be attached to the building?

The sign will attach to the building. The shape is left up to the designer, although it needs to be something that attaches easily and allows for illumination. If you look at the color elevation attached, it shows "Melting Bowl" signage on two sides of the building and you can get an idea of how they saw it at design time. It needs to be something that can be easily constructed and installed, although I would not necessarily limit it to a box sign....hope that helps.

So this is not a billboard that you see on interstates? This will be a hanging banner?

It could be both - a sign that is on a pole sign and a sign that attaches to the building. Not a hanging banner.

one question, what type of material are you going to use for this signage?

I do not know at this point. I guess you could assume it to be a metal can surrounding a formed plastic face. I don't know if there is any combination of materials that could be considered typical for restaurant's.
