Logo-Design Kurzbeschreibung

Looking for a logo for a new premium spirits store. We will specialize in seeking rare and unique bottles from around the world with half the store being a private room for tastings/masterclasses held in the evening.
The logo would simply read "ROLLINGWOOD CELLARS" but with the "R" being a man bent over pushing a barrel, the first "O". I am split between it being a rustic wooden style logo, wooden background with the copy written as burn marks on the wood. Or done as if to look like a charcoal piece of art, as if done by using the inside of a charred oak barrel.
