Leviathan Fibres logo - medieval-style leviathans and yarn go together like peanut butter and jelly

We need a new logo for our hand-dyed yarn company. We'd like the logo to have a leviathan in the style of the leviathans found on old medieval European maps - some reference pictures are attached. We are looking for something much cleaner and simpler looking than the reference pictures, but we still want it to have a medieval feel to it. A color logo would be good, but it would need to also look good if it was converted to black and white.
